Beef Enchilada Casserole Ingredients: 10 Small Tortillas Cut in halves 1lb ground Beef (can substitute any ground meat) 1 Package of Taco Seasoning 1 15oz can of Drained and Rinsed Pinto Beans 2 Cups Red Enchilada Sauce 3 Cups Cheddar or Taco Blend Cheese 1 Cup Diced Tomatoes Directions: Preheat oven to 375 degrees F. Brown ground beef over medium heat until cooked thoroughly.

Health Fair and Expo Rescheduled for October

Baxter Health and KTLO, Classic Hits and The Boot, organizers of the annual Health Fair and Expo, have announced a change in the event’s scheduled date. As a cornerstone event, the Health Fair and Expo brings health professionals, wellness vendors, and community members together for a day of learning, health screenings and fun. The event traditionally held in April has been moved to October this year.

Penny and Ashley

Penny was surrendered to the Shelter on February 4th when her owner passed away and she needed a new family to love her. Penny is a very sweet, good dog. However, when she was brought to the Shelter the comment was made that she looked more like a Pot-Bellied Pig than a Dachshund, weighing in at 40 pounds on arrival. The average size for a Standard Dachshund is eight to nine inches tall, 16-32 pounds, with a life expectancy of 12-16 years.
